A DINNER WITH CORRADO ASSENZA

Join us for a one-night exclusive dinner experience with Chef Corrado Assenza, from Caffè Sicilia, Noto (Italy). This is a four-course dinner paired with wine. 

What to expect

Maestro Assenza will share the flavors of his island and some tricks of the traditional confectionery art of Sicily that will teach you how to pair sweet and savory ingredients with Sicilian food. 

Menu

• Amuse-bouche of chickpea puree with ground Noto Romana almonds
• Salad from the two Seas (Local seasonal produce dressed with a Balsamic vinaigrette, topped with crunchy Noto Romana Almonds, and accompanied by preserved wild fish and candied citrus from Sicily)
• Pasta with Sicilian pesto (Pasta with handmade pesto of Bronte pistachios, Sicilian extra virgin olive oil, Sicilian olives, and candied bergamot peels)
• Pasta Salad (Cold water method Pasta seasoned with fresh squid, local vegetables, candied bergamot peels, pink grapefruit marmalade, and a touch of apricot jam)
• Sweet Omelette Rollè (An ancient Sicilian recipe for ricotta omelet with citron marmalade, candied citrus peels, and cream cheese)
