What to expect
Chef Paolo Formiga will guide you through making cavatelli all’arrabbiata, a hand-rolled pasta from Southern Italy, known for its rustic texture that pairs perfectly with the bold, spicy flavors of arrabbiata sauce.
We’ll kick things off with a meat and cheese charcuterie board, along with wine pairings and a beer open bar to enjoy throughout the experience. After cooking, you’ll sit down to enjoy the meal you’ve created in a relaxed and friendly setting!
About the dish
Cavatelli are small, shell-shaped pasta made with semolina flour and water, giving them a slightly chewy texture that holds onto sauce beautifully. Arrabbiata sauce, meaning “angry” in Italian, is a spicy tomato-based sauce made with garlic, chili flakes, and olive oil, bringing a perfect kick of heat to the dish. This simple yet flavorful combination is a staple of Southern Italian cuisine, showcasing bold and comforting flavors.

About Chef Paolo Formiga
Chef Paolo's culinary journey began in the heart of San Bonifacio, province of Verona. His passion for cooking ignited in his uncle's pizzeria and alongside his mother in the kitchen.
Chef Paolo's culinary repertoire is deeply rooted in traditional Italian flavors, with his favorite dish being bigoli alla carbonara, prepared with the finest guanciale. In October 2021, he ventured to the United States, where he has spent nearly three years exploring and enriching the American culinary landscape.
Currently, Chef Paolo thrives at Eataly as a pasta maker and pasta teacher, a role he has held with enthusiasm for the past two years. His culinary philosophy revolves around continuous experimentation, whether crafting pasta doughs or perfecting pizza crusts, always aiming to delight and surprise with every bite.

Ticket Policy
Please be aware that if we don’t reach the minimum number of tickets sold for the class, we may need to cancel the event. In that case, we’ll gladly assist you in transferring your ticket to another class of your choice. Thank you for your understanding!
Classes are non refundable. If you can no longer make your class, you are able to modify the date/time of the booking, up to 72 hours prior to the event, or can transfer your ticket to a friend. After 72 hours, refund, exchanges or modifications are not accepted.
