The way you cook at home, what you purchase, and how you store your ingredients can have a massive impact on our planet. This Earth Day, five chefs from five different countries will share one common mission: fight food waste at home. Pick a class and learn sustainability tips and tricks from the world’s best. Get your ingredients ready and start the change.

We believe access to this cooking class should be free, for the greater cause. However, we encourage you to support our non-profit partners by purchasing the Donation ticket type. This class is made possible by our friends at Caffè Vergnano, and donations will benefit Save Bees and Farmers EU, an organization focused on conserving bee populations.

INGREDIENTS LIST

Ingredients list will be available shortly. Ingredient kits for this recipe are available for purchase, delivered to your door, in Milan only. Ingredients are enough to feed 3-4 people. Shipping and handling charges included in cost. The first 10 people to make a donation will receive a complimentary kit, courtesy of Caffe Vergnano!

ABOUT CHEFS SARA NICOLOSI & CINZIA DE LAURI

Cinzia, the youngest of the Altatto project, has always been accompanied by a passion for cooking, and once she obtained her artistic diploma, she joined Alma to transform her profession into a passion. After an experience on Lake Orta, at Fabrizio Tesse, second historian of Cannavacciuolo, he arrives at vegetarian cuisine at Pietro Leemann's Joia, where he deepens techniques and methods for two years. At Altatto she takes care of savory preparations with Sara, but her problem solving skills and her determination allow her to drive Altatto's entrepreneurial choices and the management of Altatto's supplies.

Cinzia is the youngest member of the Altatto project, but brings a wealth of experience in vegetarian cuisine from Pietro Leemann’s Joia. In addition to cooking at the restaurant, she plays a key role in helping to run the business behind the scenes. After studying cultural anthropology, Sara decided to pursue her passion for cooking and enter the culinary industry. She studied with Pietro Leeman, like Cinzia, as well as with Philippe Leveiilè. At Altatto, she specializes in savory preparations, and is one of the creative forces behind the brand.

ABOUT CAFFÈ VERGNANO

Caffè Vergnano has been specializing in producing fine Italian coffee since 1882. Beyond their high standards for coffee quality, Caffè Vergnano has championed sustainable practices in the industry, offering the first compostable coffee capsules in Italy.
