Much like Focaccia, many countries have their own version of this dish. This particular recipe is reminiscent of the one served at Meson de Candido, in Segovia Spain. Made from ingredients almost every kitchen already has, it produces an easy, rich soup that is perfect for cold days, sick days, or any other day in between.

This recipe has been adapted slightly from the most traditional scallion pancakes for the sake of convenience, but still brings the flavor that we know and love.
