Ingredients
4 cups of mulberries: be sure to wash them and remove the stems!
2 cups of white sugar
1 tablespoon of lemon juice
1 packet of powdered fruit pectin: similar to gelatin but not made with animal products, this will be used as a gelling agent to make your jam.

In a saucepan (the bigger the better!), crush the mulberries using a potato masher to release their juices.
Stir in the granulated sugar and lemon juice until combined.
Let the mixture sit for about 10 minutes to allow the sugar to dissolve.
In a separate bowl, mix the powdered fruit pectin with water. The packet should have instructions for the correct amount of water.
Bring the saucepan to a boil and stir to avoid sticking or burning.
Once the mixture is boiling, add the dissolved pectin and continue stirring for 1-2 minutes. Using a spoon, skim off any foam that might form.
Lower the heat and simmer the jam for an additional 10-15 minutes. Depending on the thickness of jam you want, it could take shorter or longer. The jam will further thicken as it cools.
Remove from heat and let cool.
