Packing for a camping adventure doesn't mean you have to compromise on your dietary choices. For vegan campers, finding delicious and nutritious meal options can be a fun and creative part of the outdoor experience. Breakfast


The most important meal of the day! 


Overnight Oats for camping

Overnight oats


  • In a container with a lid, combine ½ cup of oats, ½ cup of non-dairy milk, ¼ cup non-dairy Greek yogurt, 1 tablespoon of chia seeds, 1 teaspoon of honey, and ½ teaspoon of vanilla extract.

  • Stir and let sit in a cooler.

  • Serve with some fruit or nuts!


Fruit and nut bars


  • Before your trip, pulse together nuts and dates. Add seeds, honey, dried fruit, salt, and whatever else your heart desires.

  • Using a baking dish, press the mixture into a large, even layer. Refrigerate for 2 hours.

  • Cut into bar-sized bits, and pack it for your camping trip!


Trail mix


Combine all your favorite nuts, dried fruit, chocolate chips, and seeds. It doesn’t get much easier than this!


Lunch


Something quick and on-the-go.


Hummus for camping

Hummus and veggie wraps


Get some tortillas, hummus and a few of your favorite sliced vegetables (carrots, cucumber, bell pepper, cherry tomatoes, mixed greens). You can meal prep these before hand for a nice on-the-go lunch!


PB&J


Two slices of bread, some peanut butter, and jam. Perfect for a hiking pit stop.


Snacks


Midday fuel.


Granola bar for camping

Fruit Any fruit will do! Here are some durable ones: apples, oranges, bananas, grapes, and pears. Dried fruit also makes for a great snack.


Bars Reuse those bars that you made for breakfast. Easy peasy!


Dinner


As the sun sets, the feast begins.


Grilled vegetables for camping

Grilled veggie skewers Chop up the same vegetables from your veggie wraps into bite-sized chunks and put them on a skewer! Grill to camping perfection.


Bean and vegetable chili


  • Heat the olive oil in a camping pot and saute diced onion and garlic in the pot. Add your vegetables (bell pepper, carrots, zucchini, etc.) and saute until the vegetables begin to soften.

  • Stir in beans and tomatoes. Tomato juice is perfect, too.

  • Season with chili powder, cumin, paprika, oregano, salt, and pepper. Stir it all together with some vegetable broth.

  • Simmer the chili and serve!

S’mores


Is it really a camping trip without the s’mores? Grab your marshmallows (vegan brands include Dandies, they are made without gelatin and are a favorite among those looking for plant-based alternatives; Trader Joe’s and Freedom Mallows), vegan chocolate, and graham crackers. Time for some fireside ghost stories!
